Madagascar Bourbon Vanilla Chicken (Malagasy recipe)
How to make Vanilla Chicken: An Authentic and Exotic Recipe.
The vanilla chicken is an emblematic dish of Madagascar, combining the fragrant sweetness of the vanilla bean with the tenderness of the chicken. A subtle blend of sweet and savory, it reveals all the richness of Madagascan cuisine and is ideal served with white rice.

Ingredients for 4 people
- 4 chicken thighs (or chicken cut into pieces)
- 2 pods of Madagascar Bourbon vanilla
- 2 onions, thinly sliced
- 2 garlic cloves, minced
- 20 cl Coconut milk (can be replaced by crème fraiche)
- 10 cl chicken stock
- 30 g butter
- Salt and pepper
Preparation
- Prepare the vanilla: Split the pods in half lengthways to release the seeds. Scrape the pods lengthwise to remove the vanilla seeds with the blade of a knife. Set aside seeds and pods.
- Cooking the chicken:Heat the butter in a casserole dish. Fry the chicken pieces until golden brown on all sides. Season with salt and pepper and set aside.
- Prepare the sauce: In the same pan, sauté the onion and garlic. Add the vanilla seeds and split pods. Stir to release the aromas.
- Simmer: Return the chicken to the pot. Pour in the stock, cover and simmer over low heat for 30 min.
- To finish the sauce: Remove the vanilla pods. Add the coconut milk (or crème fraîche). Reduce gently for 5 to 10 minutes, until the sauce is smooth.
Suggestions for accompaniment
- Fragrant white rice.
- Sweet potato purée.
- Steamed or pan-fried vegetables.
