Crème Anglaise
with Tahitian Vanilla
Ingredients for 4 people
- 500 ml whole milk
- 4 egg yolks
- 100 g powdered sugar
- 1 Tahitian vanilla pod
Preparation
- Split the Tahitian vanilla pod in half lengthways and scrape out the seeds.
- In a saucepan, heat the milk with the vanilla seeds and pod.
- In a bowl, whisk the egg yolks with the sugar until the mixture whitens.
- Pour the hot milk over the egg mixture, whisking constantly.
- Return to the pan and cook over low heat, stirring, until the cream thickens slightly.
- Remove from heat and allow to cool.
Presentation
- Serve your Tahitian Vanilla Crème Anglaise with fresh fruit, cakes or any other dessert of your choice.
